Optimal Heart Attack and Stroke Prevention Center nutritionist Dr. Donna, presents a sample day of quick and easy heart healthy recipes to try out in your diet. These recipes were also featured in a cooking demonstration at Optimal Heart Attack and Stroke Prevention Center’s May event, The Heart of It All: Don’t Lose Sight of Your Why. Here is a light and simple salad recipe to try for one of your lunches.
Fiesta Salad

Ingredients:
- 1 can organic black beans
- 1 can organic corn
- Chopped red onion
- Chopped cilantro (1/2 bunch)
- Chopped red pepper
- 2 tbsp olive oil
- Juice of 1 lime
Add ingredients to a large bowl. Mix well. Refrigerate and let sit for 2 hours to let the juices marinate the salad. Serve as a stand-alone salad, or with Healthy Chicken Tortillas.
