Lemon Couscous Salad
(Makes 4 servings)
This is a great summer salad that’s light in calories, saturated fat, sodium and cholesterol.
1 1/2 cups couscous
2 cups water
1 spray olive oil cooking spray
1 tablespoon chopped fresh mint
1/4 cup chopped green onion
1/4 cup chopped red bell pepper
1/4 cup chopped green bell pepper
1 lemon, zest and juice
1) Combine couscous and water in small sauce pan; cover and cook for 5 minutes or until water evaporates and couscous is tender.
2) Lightly spray top of couscous with olive oil cooking spray and toss with remainder of ingredients.
3) Chill before serving.
